Grown in northern Thailand, our Butterfly Pea Flower, also called Blue Pea Flower, is premium quality and certified organic FR-BIO-01 by Ecocert France.
Traditionally offered as a welcome cocktail in Thailand with lemon and honey, it is also widely used as a natural food colouring to make magnificent culinary creations: blue rice, latte, pasta, pastry cooking, smoothie bowl, bread, pancakes..
The colourful distinctive feature of the butterfly pea flower
Its deep blue is the result of a natural pigment: anthocyanin, from the flavonoid family. Anthocyanins are coloured molecules that change colour according to the surrounding pH. At an acid pH of less than 7, the anthocyanins turn pink-red, while at a neutral pH they turn blue and turn yellow-green at a basic pH of more than 7.
As a result, depending on the infusion you choose, the obtained blue will be able to change from one colour to another. (The other plants of the infusion and their PH are the cause of these slight changes)
