Mango sticky rice or commonly called Khao niew Ma Muang is a traditional local recipe very popular in Southeast Asia. This rice dessert sloggy scented here with butterfly pea flowers with its fresh and juicy mango is really great for this season! 🥭

The preparation of this dessert requires to do it the day before, at least, as far as the rice is concerned. The ideal is to let it infuse in a water with butterfly pea flowers all night so that the color is as bright as possible. Otherwise, the preparation time is quite fast and on top of that, very simple! 🦋

We also have the alternative of blue rice, a less sweet recipe that can be accompanied by saltier dishes by to be 🍚.

For 2 people 🧑🏼‍🤝‍🧑🏻:

Ingredients:

  • 100 g sticky rice or
  • two glasses of water
  • 100ml coconut milk
  • 25g sugar
  • A pinch of salt
  • A teaspoon of Maizena
  • A very ripe mango
  • 15-20 butterfly pea flowers

 Steps:

For the rice🍚

  • Pour a glass of sticky rice
  • Wash the rice 3 times
  • A pinch of butterfly pea flower (about fifteen flowers).
  • Infuse the rice in butterfly pea flower water. Let sit overnight or nearly 4 hours.
  • Drain the rice
  • Steam the rice using the wicker basket for about twenty minutes over medium heat.
  • Once the rice grains are tender, flip the rice several times in the bamboo basket.
  • Leave aside and continue with the preparation of the coconut sauce.

For the coconut sauce 🥥🍶

 

  • Bring the coconut milk, salt and sugar to a boil in a saucepan.
  • Add the cornstarch to the mixture while stirring.
  • Add the rice to the coconut sauce.
  • Leave to cool for about twenty minutes.

 

For the coconut topping 🥥

 

  • In a saucepan, add three large spoonfuls of coconut milk.
  • Add a teaspoon of sugar
  • Add a good teaspoon of cornstarch / flour
  • Cook over low heat for about ten minutes.

 

Serve the sticky rice with a peeled mango and pour the coconut sauce to dress the rice. You also sprinkle the whole thing with some sesame seeds 🌱.

 

For an even more traditional look, we advise you to serve this dessert on a banana leaf (accessible in major Asian supermarkets such as Tang Frères or Paris Store).
